Gingerbread sourdough muffins

It’s been a while since I posted a sourdough recipe, so I will make it up by offering up to the internet not one, but two new recipes. 

Well, one recipe and one (delicious) variation.

I call these Alaskan Frontiersman Muffins because the original recipe came out of this book. Not only does it have many, many easy sourdough recipes, the author, Ruth Allman, also talks about the history and folklore about sourdough. It’s a lot of fun. In other words, I highly recommend this book, A++. 

These muffins are an easy way to use up extra sourdough starter, or that discard starter you’re supposed to toss every time you feed it if you are a responsible sourdough starter owner (I am not).

The first recipe is almost straight out of Alaska Sourdough. And, as in true sourdough fashion, there are endless improvisations. I’ve included my favorite, gingerbread muffins, but I’ve added banana, almond pulp, chocolate chips, and other things I’m sure I’m forgetting. Try your own variations! I’ll probably work!

You know you want some.

The most important part of the recipe is the baking soda. It makes the dough nice and fluffy and, according to Allman, nullifies the sour flavor of the sourdough. Other than that, anything goes. Have fun!

Ingredients
  1. 2 cups sourdough
  2. 1/2 cup sugar
  3. 1 egg (OR 1 tbs ground flax seed mixed with 3 tbs hot water)
  4. 1/2 cup oil
  5. 1 1/2 cup white OR whole wheat flour
  6. 1 tsp baking soda mixed with warm water
Instructions
  1. Mix sourdough, sugar, egg and oil
  2. Add soda
  3. Fold (don't beat) flour into mixture
  4. Fill greased muffin tins half full with batter
  5. Bake at 375 degrees for about 30 minutes

  3. 2 tbs dark molasses
  4. 1 egg (OR 1 tbs ground flax seed mixed with 3 tbs warm water)
  5. 2 tbs oil
  6. 1 tsp ground allspice
  7. 2 tsp ground ginger
  8. 1 tsp ground cloves
  9. 1 tsp ground cinnamon
  10. 3/4 cup whole wheat flour
  11. 1/2 tsp baking soda dissolved in warm water
Instructions
  1. Mix sourdough, sugar, egg, oil and spices
  2. Add soda
  3. Fold (don't beat) flour into mixture
  4. Fill greased muffin tins half full with batter
  5. Bake at 375 degrees for about 30 minutes
